JUDITH Hipwell from Cohuna in Victoria sent in this great recipe for cucumber relish.

    CUCUMBER RELISH
  • 3 large apple cucumbers
  • 900g green apples
  • 960g onions
  • 480g sugar
  • 900ml white vinegar
  • 1/2 tspn cayenne pepper
  • 1 tbspn salt
  • 1 tbspn tumeric
  • 1 tbspn cornflour (or more if needed)

Cut up cucumbers, onions and apples. Add spices, sugar and vinegar, boil till tender, stirring occasionally.

Thicken with cornflour and cook for another five to 10 minutes. Bottle in sterilised jars. Delicious!
