HERE'S a delicious recipe for saucy chicken and bacon casserole sent in by Kerry Murphy of Mansfield in Victoria.

    SAUCY CHICKEN AND BACON CASSEROLE
  • 6 chicken fillets
  • 2 tspns oregano
  • 3/4 cup plain flour
  • 60g butter
  • 2 tbspns oil
  • 60g extra butter
  • 1 clove of garlic, crushed
  • 4 rashers of bacon, chopped
  • 4 leeks, sliced
  • 6 shallots, chopped
  • 250g mushrooms, sliced
  • 400g can tomatoes, mashed
  • 400g can cream of chicken soup
  • 1/2 cup dry white wine
  • 1/2 tspn chilli sauce
  • 1 tspn worcestershire sauce
  • 1 tspn soy sauce
  • cream
  • chives

Cut chicken fillets into three pieces and toss in combined oregano and flour.

Heat butter and oil in pan, add chicken in batches. Cook until light golden brown.

Remove from pan, place in ovenproof dish. Heat extra butter in pan, add garlic, shallots, bacon, leeks and mushrooms, cook for a few minutes or until mushrooms are soft.

Add to chicken with undrained mashed tomatoes, soup, wine, chilli sauce, worcestershire sauce and soy sauce.

Mix well and cover.

Cook in moderate oven 40 minutes or until chicken is tender. Just before serving, stir in cream (to taste) and chives. Serves 6.
