HEALTHY TUNA, CORN AND DILL PATTIES

  • 425g can tuna in springwater, drained
  • 1/2 cup ricotta cheese
  • 2 tbspns dill, chopped
  • 1/2 cup corn kernels
  • 1 tspn lime juice
  • 1/2 cup breadcrumbs
  • 2 eggs, lightly beaten
  • 1/2 cup mayonnaise
  • Salt and pepper

Place all ingredients in a bowl and mix until well combined.

Shape large tablespoons of mixture into patties and place on a plate.

Refrigerate for five minutes.

Heat 1/4 cup olive oil in a large non-stick fry pan over medium heat until hot.

Add the patties and cook for four to five minutes on each side, or until cooked through.

Remove patties and drain on paper towel.

Serve hot or cold.
