IN A saucepan put 1/4 cup of water, a tablespoon of finely chopped lemongrass and 1 kaffir lime leaf (cut into strips with scissors) and bring to a boil.

Boil for a minute - this will soften the lemongrass and bring out the flavour of the lime leaf.

Remove from the heat.

Add a tablespoon each of fish sauce, brown sugar and chilli sauce, 2 finely chopped garlic cloves, 2 tablespoons lime juice and 3 tablespoons each of soy sauce and finely chopped fresh coriander.

Mix well. Taste-test the dressing. It should be tangy - a balance of salty, sweet, spicy and sour.
