HERE'S a delicious recipe for summer fruit ripple, sent in by Tara Renton of Ombersley.

SUMMER FRUIT RIPPLE

  • 125g raspberries
  • 250g strawberries, hulled, quartered
  • 125g raspberries
  • 125g blueberries
  • 2 tbsp icing sugar
  • orange juice
  • 275ml double cream
  • 275ml natural yoghurt
  • 2 tbsp clear honey

Wash fruit. Put a handful to one side. Place orange juice, sugar and half the fruit into a blender and make a smooth puree. Sieve the blended fruit into a mixing bowl to separate the seeds and pulp.

Add the rest of the fruit (except decoration) into the puree, stirring with a metal spoon. Lightly whip the cream until it stands up in soft peaks.

Fold the yoghurt, honey and half the fruit mixture into the cream. Layer the marbled cream with the rest of the fruit mixture in serving glasses. Decorate.
