PINEAPPLE CURRY MEAT BALLS
- Meat balls:
- 1kg minced steak
- 1/2 cup cabbage, shredded, or 1 cup celery, diced
- 1 large onion
- 1 green pepper
- salt
- pinch ground ginger
- pinch cloves
- 2 tspns curry powder
- 1 tspn lemon juice
- oil for frying
Mix all together and roll in seasoned flour. Fry until lightly browned, drain and put aside.
Curry:
- 2 tbspns oil
- 2 onions, sliced
- 2 large tomatoes, sliced
- 1 small potato, diced
- 1 cup pineapple, cubed
- 2 cups water
- 1/2 tspn ground ginger
- 1 tspn tumeric
- 1 tbspn curry powder
- pinch cayenne pepper
- pinch cinnamon
- 1/2 cup coconut cream
Fry onion and add all dry ingredients.
Stir in tomato, potato and pineapple. Cook gently for five minutes.
Add water and coconut. Place meat balls in curry sauce. Cover and simmer for 15 minutes. Serve with rice.
