BUTTERFLIED GREEK CHOOK
- size 15 free range chicken
- 1/4 cup cracked black pepper
- 1/4 cup dried oregano leaves
- 1/4 cup salt flakes
- olive oil
Cut chicken down backbone and flatten out.
Rub about 2 tbspns olive oil over bird, both sides. Mix together other ingredients and rub in to bird.
Place meat side down on barbecue plate for 25 minutes, turn over and continue cooking for 20-25 minutes.
Serve with salad.
