THIS recipe for coconut and pineapple dessert was sent in by Catherine Rosewallof Kerang.

COCONUT AND PINEAPPLE DESSERT

  • 1 can crushed pineapple, drained
  • 1 can mandarin segments, drained
  • 375ml light sour cream
  • 2 bags vanilla marshmallows
  • coconut for topping

Place the first three ingredients in mixing bowl. One bag at a time, melt marshmallows in a microwave safe bowl for 15-20 seconds.

As soon as marshmallows have melted, place in mixing bowl and stir quickly. Sprinkle coconut on top.

Place bowl in fridge to set for about 30 minutes.
