SHEARERS CAKE

  • 2 grated Granny Smith apples
  • 250g butter
  • 2 tbspns golden syrup
  • 2 cups self-raising flour
  • 2 tspns cinnamon
  • 1 cup raw sugar
  • 2 cups coconut
  • 1 cup sultanas
  • 1 cup currants
  • 2 eggs

Combine coarsely grated apple, sifted flour, cinnamon, sugar, coconut, sultanas and currants.

Melt butter with syrup and add to the bowl with lightly beaten eggs.

Mix well and spread into well-greased Swiss roll tin (30cm x 25cm).

Bake for 35 minutes in a moderate oven. Cool in tin. Dust with icing sugar and cut into squares when cold.
