TRY this delicious recipe for chicken with leek and bacon, sent in by Helena Kennedy of Sandstone Point in Queensland.
CHICKEN WITH LEEK AND BACON
- 4 chicken fillets
- 1 leek, sliced
- 4-6 rashers rindless bacon, chopped
- 1 tbspn grainy mustard
- 300ml cream
Brown fillets in fry pan, then place in an ovenproof dish and set aside. Slice leeks, whites only, and chop bacon. Saute bacon and leek together until soft, then place on chicken.
Mix mustard and cream and pour over chicken. Place in oven 180C (fan forced 160C) for about 30 minutes.
If fillets are very thick, they may take a little longer to cook.
