JUDY Conheady of Camperdown in Victoria sent in this delicious recipe for spicy tomato relish.
SPICY TOMATO RELISH
- 1.5kg ripe tomatoes, roughly chopped
- 4 onions, finely chopped
- 3 cloves garlic, finely chopped
- 2 tbspns salt
- 500g sugar
- 2 tspn ground allspice
- 3 cups white cider vinegar
- 1 tbspn dry mustard
- 1 tbspn curry powder
- 1 tspn cayenne pepper
- 1 1/2 tbspn cornflour
Mix tomatoes in a bowl with onion, garlic and salt. Stir and leave for 1 hour.
Drain and discard liquid. Put the tomato mix in saucepan with sugar, allspice and vinegar.
Simmer gently for about 45 minutes to 1 hour until mixture is reduced by half. Mix mustard, curry powder, cayenne and cornflour with extra vinegar to make a thin paste and stir into relish.
Cook another 5 minutes or until relish is thick. Put into warm, sterilised jars and cool before sealing.
