TRY this delicious recipe for tomato paste, sent in by Margaret Arnold of Tresco.

TOMATO PASTE

  • 750g ripe tomatoes
  • 2 onions
  • 1 carrot
  • 1 stalk celery
  • 2 fresh basil leaves (or dried basil)
  • 2 sprigs of parsley
  • 1 tbspn olive oil
  • Sugar, salt and pepper to taste

Dice tomatoes, onion, carrot and celery and place in a large saucepan.

Add oil and herbs. Cover and simmer for 30 minutes. Then press this through a sieve. Return to the saucepan and boil uncovered until desired consistency. Put into sterilised jars and seal with lids.
