TRY these recipes for ginger cream salad dressing, orange dressing and chilled red wine dressing.
GINGER CREAM SALAD DRESSING
Mix together half a teaspoon of ground ginger and 300ml cream. Whip until stiff. Fold in quarter cup of chopped dates and quarter cup of chopped nuts. Fold gently through chopped or sliced fresh fruit.
ORANGE DRESSING
Blend together 85g cream cheese, quarter teaspoon salt, 2 teaspoons sugar, pinch of paprika, a pinch of cayenne, 3 tablespoons orange juice and 1 tablespoon lemon juice. Pour over fruit salad.
CHILLED RED WINE DRESSING
This is particularly good when served over melon, strawberries or blueberries. In a saucepan, combine 1 cup dry red wine, half cup sugar, 2 tablespoons red wine vinegar, 1 cinnamon stick and 8 whole cloves. Bring to a boil. Reduce heat and simmer, uncovered, for 10 minutes. Strain the liquid and discard cinnamon stick and cloves. Cover and refrigerate. Pour over fruit just before serving.
