MIKAELA Ewington of Howrah in Tasmania sent in this recipe for banana delicious.

BANANA DELICIOUS

  • 4 bananas
  • juice of half a lemon
  • 2 eggs
  • 2 tbspns sugar
  • 1 cup coconut
  • 2 tbspns apricot or other jam

Preheat oven to 180C.

Place peeled and sliced bananas into oven-proof dish. Sprinkle with lemon juice.

Beat eggs and sugar in a separate bowl until creamy. Stir in coconut and jam and mix well.

Pour evenly over the bananas. Bake for 25 minutes or until golden.

Serve with cream, ice cream or on its own.
