TRY this delicious recipe for boiled chocolate cake, sent in by Moira Hazell of Lancaster in Victoria.

BOILED CHOCOLATE CAKE

  • 1 cup water
  • 1 1/2 cups sugar
  • 125g butter
  • 2 tbspns cocoa
  • 1/2 tspn carb soda
  • 2 eggs beaten
  • 1 1/2 cups self-raising flour, sifted

Combine water, sugar, butter, cocoa and soda in a saucepan and bring slowly to boil. Simmer for 5 minutes then cool.

Add eggs and flour and mix well. Place in 20cm greased and lined round tin.

Bake in moderate oven for one hour. When cool, ice with chocolate icing and sprinkle with nuts.
