WHEN you're dealing with the world's most notoriously exacting chef, your product had better be up to scratch.
This was the case for Hopkins River Beef which, as part of Put Victoria on Your Table month, supplied Gordon Ramsay's new Melbourne restaurant, Maze, with 30kg of grain-fed striploin, served at the weekend.
Maze head chef Josh Emett was attracted to the brand, not only for its reputation of quality and consistency, but also its environmental credentials.
Hopkins River's Adam North said: "Victorian producers work long and hard to create their produce and it is great that restaurants are recognising this and supporting them".
"Anything Gordon Ramsay endorses will generally take off . . . it's a real compliment that we are producing beef that quality restaurants like Maze are using."
