EASY PUMPKIN PIE

  • 220g frozen flan case
  • 350g pumpkin
  • 2 eggs
  • 3/4 cup brown sugar
  • 3/4 cup cream
  • 1 tspn mixed spice

Cook the pumpkin and mash well. Let cool. Place the flan case on an oven tray.

Beat the eggs and brown sugar and whisk in the cream, spice and 1 cup of pumpkin puree. Pour into the flan.

Bake in pre-heated oven at 180C for 15 minutes, then reduce heat to 150C and cook for a further 30 minutes or until set.
