PHILIPPA Kalkipsakis from Montrose sent in this delicious recipe for orange pie.  

ORANGE PIE

  • 1 sheet of sweet shortcrust pastry
  • 1 cup sugar
  • 1 egg, beaten
  • 3 tbspns self-raising flour
  • Glace ginger, finely chopped
  • 3 oranges, peeled, chopped and drained
  • Desiccated coconut

Grease then line a pie plate with pastry. Combine the sugar, egg and flour, stir well. Add the ginger and drained oranges.

Pour the mixture into the pie dish and spread evenly. Sprinkle with coconut.

Bake in a hot oven for about 15 minutes. Reduce heat and bake for a further 40 minutes.
